One of our favorite breweries to work with, passionate and great to see them joining forces with the new generation to teach them how local and organic farming can be profitable.

We invited them to our ‘First sake festival of Belgium’ in 2018 at DIM DINING.
And we felt in love with their approach to every type of sake.

The Sogen Brewery was founded in 1768, making it the oldest brewery in Ishikawa Prefecture at the tip of the Noto Peninsula and one of the oldest breweries in all of Japan. The brewery was thus a founding member of the Noto toji guild, the local association of sake brewers whose students spread throughout Japan, spreading the knowledge and techniques developed on the Noto Peninsula. Sogen’s current brewmaster, Yukio Sakaguchi, started working at the brewery at the age of 15 and has built up an impressive experience over the past 40 years, which is reflected in exceptional sake.

A beautiful reflection of the Ishikawa style, exuberant on the nose with fruity, grain and milk aromas, powerful on the palate but with some fines towards the aftertaste, a sake full of confidence but ultra-clean type of Junmai sake.

A remarkably expressive nose, marked by fruity aromas of banana and pear, with hints of cereal and lactic notes. On the palate, the fruity sensations sensed on the nose are clearly present, accompanied by good acidity and rich umami. The structure is limpid and lively. The sake then develops notes of ripe fruit, fig and dried apricot. The finish is long, punctuated by a lovely bitterness that adds plenty of freshness. We love it !
