Fuji-Nishiki Shuzo Brewery is located in Fujinomiya City, Shizuoka, at the foot of the majestic Mount Fuji. The brewery was founded in 1688 and is now in its 18th generation, brewing sake using methods and skills acquired over its 300+ year history.
Fuji Nishiki’s sakes are 100% Shizuoka and more, as the brewery grows its own rice, Homarefuji, on its own property. Homarefuji is a neighbour of Yamadanishiki, the grain is large and the polish can be substantial. The yeast is also native to Shizuoka. It gives a very fresh nose. Finally, the spring water comes from Mount Fuji, it is naturally filtered by the bedrock and drawn from a depth of 30m. The yeast ‘Shizuoka’ gives the right flavors what the brewers wants to create. You literally taste the crispness of the fresh Fuji water.
This Tokubetsu Junmai or ‘ Special Junmai’ has all the elements that make a sake complex: acidity, minerality and ginjo fragrance. All in perfect balance. If you like this style, this is an extremely clean and crisp sake.
16% looks strong in alcohol level but it gives the structure to the vibrant minerals and freshness. Well paired with some fatty O-toro or Saba.
