All of the sake of Chiyokotobuki is brewed using Haenuki rice making it a true local Yamagata drink.
Chiyokotobuki was founded in 1696 but has been moved to the village of Sagae and is now located there since 100 years. As of year 1990, they brought the local rice varietal Toyokuni to a higher level. With their love for local rice varietal they make their okarakuchi with haenuki rice.
This sake is very dry with a light body, in Japanese the word ‘kara’ means ‘dry’ and in this case ‘O-kara-kuchi’ means extra dry on the palate with a smooth finish. Beautiful representation of a dry tanrei karakuchi type of sake.
