Description

The sake adventure started in 1875 and have since then and still be very renowned for their unpasteurized pure sake.
This Shichida junmai comes from Tenzan Sake brewery, which is located in Saga Prefecture on the southwestern of Kyushu in Japan, the brewery derives it's name from the local Mountain Tenzan and the sake name from the brewery's owners, 'The Shichida family. 
A unique fact about this brewery is that alongside sake production, they also used to mill flour, produce noodles and polish sake rice varietals. Since the 1960's, however the brewery has closed their businesses to focus on their premium sake production. Their streamlined efforts have definitely not gone unnoticed as the  brewery's dedication towards their sake truly shines through in their lineup. 

This brewery has everything one could wish for to make top sake: spring water, which is in the top 100 water, renowned rice terroirs, ... the brewery is located next to the Gion river. The Gion River flowing in front of brewery is a clear stream that collects the Tenzan underground water and is one of the most famous spots for fireflies in Japan. The Tenzan stream underground water is the ideal water quality for sake making and as such we use the catchphrase "Great sake lies in the village of the water and fireflies." In addition, the Meiji Kura, Taisho Kura and the Showa Kura are designated and registered as cultural assets of Japan. owes its name to the mountain Tenzan. the 3 kura, (buildings where the sake ferments) were built between 1868 and 1889 and are official cultural heritage of Japan, they are called Meiji, Taisho and Showa respectively.
This sake has a calming, sweet aroma , reminiscent of honey as well as refreshing aroma of green apple. A refined, mild acidity completes the palate. 
As this sake is unpasteurized (nama), it is advised to enjoy it on a short term and at cold temperature, otherwise it looses al its nama characteristics. 
This Shichida Junmai is also a muroka style of sake, meaning that it's non-charcoal filtered. While all sakes undergo some filtering of sorts, muroka only implies it is not done with charcoal. Instead, muroka style sakes are often brewed in a manner in which the final product is more clear and clean and simply do not need further filtration.
