A unique evening!
During the Michelin BELUX 2023 gala dinner in Mons, together with restaurant Zilte*** and restaurant Colette**, we prepared a unique menu.
For our starter featuring Hamachi aged in Shio Koji with black rice, Ume Kosho, seaweed, and Sake kasu, we proudly served a sake at Michelin for the first time ever!
In the glass was a beautiful, dry Junmai-style sake from Rihaku Brewery in the Shimane prefecture of Japan. This sake is made using peony blossoms, which impart a pink hue due to the Shikokumai rice used (a variant of black rice). Guests enjoyed aromatic notes of blue plum and a light minerality in the finish.
