On the 25th of April, we welcomed a select group of guests to an exclusive Bollinger dinner. Champagne house Bollinger and our saké expert Jonas Kellens brought out the most exquisite vintages, which were paired with an extraordinary menu, served for one night only. “Champagne is an amazingly versatile drink, it's very elegant and complex at the same time and it can be paired with a lot of unknown products. Even with a heavy dishes as Wagyu beef” Jonas explains. Our chefs Simon Van Dun and Yuki Kimura have made a 6-course menu specially for that night.

A special thanks also goes out to our Dim Dining partner, Champagne House Bollinger where we are officially Bollinger Ambassador for. At the end we had an extraordinary mystery bottle that our guests needed to guess with vintage year it was and the year of dégorgement. We would not be Dim Dining if we didn’t serve the most oldest vintage that is on the worldwide market. A beautiful magnum 1976 to end this extraordinaire dinner with. That is dégorged in 2013. So it layed 37 years sur lattes. “It will be maybe one of the last 2 bottles ever on this planet” Olivier de Schutter ( Ambassador of Bollinger ) explains.
