Description

This velvet umeshu is made by carefully inserting the best Nanko plums from the region around the brewery Iinuma Honke. Macerated for a long time in rice Shochu and the  get balanced with some small added sugar.The elegant taste of Almonds, apricot are well balanced with the right sourness. This is a drink to enjoy cold or on the rocks or sipping it next to your cheese platter.

Where other fruits become more mellow as they ripen, ume’s acidity, especially their citric acid content, rises. This acidity is responsible for many of ume’s health benefits, and helps preserve the volatile compounds that give ume their complex flavor.

Ume are chemically and gastronomically unique, similar to apricots in fragrance, oranges in color, and berries in acidity. Once you taste them, you’ll agree that there’s nothing quite like ume.

Of course it’s no coincidence that the town of Shisui, where the brewery is located, has traditionally had a plum tree as its emblem. A clue to Shisui’s heritage in sake production is in its name. Literally meaning “sake well”, the small town in Chiba Prefecture was named Shisui after a local legend that said that sake gushed from its soil. The legend may be based on fact. Built on three rivers and surrounded by rice paddies, providing the essential ingredients of water and rice for sake production, Shisui developed into a center for sake in ancient times.

Iinuma Honke produces the Kinoene brand in rural Chiba not far from Tokyo. Iinuma Honke has been around for more than 300 years and is in its 16th generation.

Currently, his team of five kurabito (brewers), including Toji (Master Brewer) and Factory Manager Kawaguchi, takes on the entire sake brewing process. They pride themselves on using rice from local farmers, which provides a rich body and a soft taste. They have some very cool and fine products, as well as fruit cake that looks and tastes beautiful.
