Description

“Dassai” literally means “otter festival”. This is a word that was used long ago in the region of Yamaguchi Prefecture, as there were many otters frolicking in the nearby rivers. This brewery thrives for perfection and only brews junmai daiginjo.

23 % is the polishing ratio, which is one of the highest polishing ratios there is in producing sake. This makes it incredibly light but yet very intense and pure on the palate.

It has a smell of wild flowers, grapes and strawberries in the nose and it tastes in the mouth like very smooth fleshy ūme-plums and pears.

Very limited production, to be found on the sake lists of the best restaurants in Japan.
